For a 00 5.3, I'd do a search on a 99-02 PCM swap...then get an 01-02 PCM custom tuned. The 99-00 PCM's are notorious for false knock (especially if an aftermarket cam is installed). A bunch of us guys that have or had 99-00's have made the swap with great results (99silver6.0 and creederado come to mind). For 99's, it's a good idea to swap injectors also, as the 99 injectors flow less than the 00 and up (something like 21lb vs. 24lb...can't remember exactly). I also had to swap in a newer alternator and run a wire to make the PCM compatable (had a flashing battery light), but I believe that most of the tuners have found a way around that since I did my swap (which was no biggie for me as I upgraded to a 145amp alt anyway)

Try PCMforless, Wait4me, or Nelson Performance. They will be able to get you a custom tuned PCM. Use the search button to find out info on this site about each and it might be a good idea to give each a call to see who you feel comfortable with. Handhelds are not recommended around here since they are pretty much cookie cutter tunes. You will get much better performance from a custom tuned PCM.

Save your money. Hypertech programmer was a waste of $300. Listen to these guys and go with a tune
