Do the wideband first then the headers.
You may be close enough on the tune after the header install that you can drive it safely before tackling the tune. You'll know by watching the wideband as you drive. If the air/fuel is to far one way or the other it will be time to work on the tune. If the tune is close now the header install will bring it closer or push it further away. I say this because you have a "canned" mail order tune that was probably a mild cam, headers, cold air intake tune to start with.

You're not going to be able connect the collectors to your existing pipes without an ORY or have some custom exhaust work done. The SE ORY has the bung. If you're doing custom your exhaust guy can put the bung pre cats (if you're keeping them).
When you get the wideband let me know and I'll send you my old single Auto Meter gauge pod. It's painted graphite to match the interior and will save you $40 for the pod and $20 for the paint. I just installed a two gauge pod and this single is useless to me. You'll need to get four 5/16 christmas tree type push pins to fasten it to the pillar (shown in pic).

Texas just does the scanner. Not even a visual inspection. I’ll take the cats off but I won’t have anything there anymore and then I really won’t have something to connect it to hence why I was just gonna wait for the headers.
I did read something about the wideband that said you could do it behind the cats but it would be less accurate (of course) My thoughts behind doing it this way is just that I can do it to just set it up and get everything running in preparation for the header swap
