Should i get the open country A/T or H/T
any opinions on these?
I'd probably run like a 265-75-16 or 17 around that size
I don't wanna run a 285 again

What kind of driving do you do mostly? The HT will have better wet road grip, will be quieter, and has less rolling resistance. That will net you better fuel economy, and a longer lasting tire. The AT will work well on wet & dry roads, but will have better grip off-road. So if you need an all-terrain tire, it will better suit your needs, at a trade-off.
Also, if you drive on alot of gravel roads, the AT will be more chip-resistant, and the tread will be more durable. Mostly it just depends on your needs & expectations from the tire.

HT would be fine, i don't go off on my off road adventures with the GF anymore so i'm fine
I think the HT would be fine, I want something with around a 112-118 speed rating
And pretty much just going to the beach and highway/street driving

I think my brother got 40K miles out of his toyo A/T's. My last set of tires I went with the cooper zeon ltz which are a similar tread pattern for about $50 less per tire. IDK their speed rating but I have had them up to ~120 a few times
