Problem with that setup is that you run the risk of over-extending the pistons in the caliper when the pads wear down.

I'm looking to do the SUV upgrade in the back and the 05+ upgrade in the front. I'm looking into the Baer DecelaRotor OE Replacement Brake Rotors. They make a 12.8" rotor for the front that has a width of .790" BUT they offer a rotor for an 04 model that measures 12.98" and has a thickness of 1.18". My question is wouldn't the 04 model be better?? Or does summit just have these rotors under the wrong category?

Logically it would, but what else would you need to align with the rotor? I'm assuming it's more than just a bracket since the thicknesses are so different, so you'll probably need a different caliper too I would imagine.

Yes, you do need a new caliper for the 05 front upgrade. I was looking into it for awhile but just ended up getting a 14" oversized rotor and bracket kit with braided lines instead, and I have all the braking I could need.
