if they have to drop the pan to drain the fluid they are already half way done pulling the tranny, driveshaft, a few bolts and some electrical connectors and thats it.
2 hours isnt unrealistic IMO, the last tranny i changed in my truck took me 4 hours by myself and that included a break to eat and 45 minutes trying to line up the dip stick tube.
have them do it, if you are worried that they wont put your converter in stand outside the bay door and watch them or somewhere you can keep an eye on them, or like said above pull the inspection cover and check it.

So I guess when you change your engine oil that is half way from removing the engine too. LMAO!!!
You don't remove the driveshaft, any electrical connectors or the cross member to remove the transmission pan. Remove 16 13mm bolts and the pan falls off.
