My tires are 285/75-16's also, never ever had a problem with rubbing, and I used to off-road a lot. Also got some Enkei something-something wheels, don't remember. They are discontinued, but were real cheap ($75 each) at Discount Tire. I'm sure you could find something similar. No bling-bling, but it looks a lot better than stock IMO. Especially for the price....I think I got $200 for my stock Z71 wheels on ebay.

What do you use your truck for, does it stay on the pavement most of time with the occasional off road (dirt roads with ruts, going to favorite camping grounds), or does it see a lot of mud holes, rocks and steep inclines, something you would see in Utah that require extensive use of 4Lo?
If you choose the first, then 20's will work fine, plus you will have the performance of a larger wheel (less sidewall flexing) on the pavement.
If you choose the second, stick with 16's so you can let out some air for the extra traction (more sidewall flexing) to overcome your obstacle whether it be mud, rocks or steep inclines. I have had good luck with 10-15 psi in tires but you are pretty much limited to 4Lo and second gear. If you need to go faster then you have to add air.
