First Off These Are My Mods:

im planning on getting Lt Pacesetters but in the meantime these are my questions

Should I Weld My Stock Cats Into The Y Pipe Or Leave Them Off ?
can my truck handle the extra power with out the tranny rear end taking a **** ( I Have Junk 3.42 )
What Type Of gains Should I Expect ?
what should i get full stainless catback or just the muffler and steel pipe ( I Live in Tx. BTW)
Sorry For All The Questions Thank You Guys If AnyOne Has A Set Of Lt's In Houston Lying Around Let Me Know !!!

your tranny and rear end will be fine with your mods and weight.
as far as the headers goes, i dont think it would be necessary to get the ceramic coated ones as far as corrosion goes, but they look alot better and keep your underhood temps lower.
i just put on the ORY with my headers and the truck really sounds mean and you gotta love that catless smell
if you can find someone to pass it come inspection time i would do it.
Not really sure about gains, you will hafta get a retune to get the full power potential and delete the rear O2s if you go the ORY route. Some guys on here say between like 15 and 30hp gains but i cant verify that.

I to have the Pacesetters and the catless Y pipe. i am having some tuning probs right now so i havent been able to get it properly tuned yet, but when it hits good it feels like it has a little more low end grunt and def. pulls harder from like 3K and up.
when i get HPTuners and get down to a test and tune session at the strip i will hopefully be able to really see how much i gained.

carbon monoxide doesn't make you high, it just makes you pass out and die.
Try a search there's about 5,000 threads that list the gains and answers to your other questions and as stated in post 2 your gains will be anywhere from 15-30rwhp. Depends on how well you tune it and the rest of your exhaust.
It's enough of a gain that you will definitely notice when you drive it.
As for cat's or ORY thats up to you. Do you have inspections? If you do then just have someone make a Y-pipe for you using your stock cats.
Catback or not. I say no but that again is up to you and what your willing to spend.
You can buy 4ft of piping for like 20 bucks or less and get a muffler and make your own exhaust. but some people like to buy a manufactured cat back so they don't have to do any bending.
All you really need to know is Yes your tranny and rearend will be fine. and you will gain 15-30 depending on tune.
Everything else is up to you.
I went with Ceramic Coated because I got a hell of a deal on some low mileage used ones.
