Just me but, I think a 220/220 cam in a 4.8 that tows a 24' trailer is too big. I'd think a 210/218 .550 lift on a 112lsa would be better.
Get a custom tune, the cam, and a shift kit installed in the transmission.
Whats your budget and over all goal?

Lose the Hypertech
Stock converter is fine for now
Research the cam heavily before you have one installed
You're gonna need springs/retainers/pushrods to go with the cam
Roller rockers are not worth the $. Many have bought them and returned to stock
160* won't hurt but not really required
New timing chain and gears? Why?
New oil pump, good idea
80mm tb...might as well go 90mm
I'm not trying to tear apart your plan but I think you're spending $ on things a mechanic told you to buy....because he sells it. Search this site, you'll find more info that you can absorb in a year.

huh?
