Do not use more than ONE washer!
My 4L60E's first gear just went bye-bye less than an hour ago (story behind that
). Using ONE washer in the 1-2 accumulator should be plenty. Two washers will give you a nice, chirpy 1-2 shift, but I think a 2-1 downshift is extremely detrimental with two or more (ask me how I know). Instructions are simple. Take your time, and you'll be fine.
Shouldn't take more than a day to get it done... give yourself more than one day if you haven't done this before (start to finish).
