I typically put a bolt in the front of the passenger head and one in the back of the driver head and put a chain across to lift the engine. Make sure the bolts are threaded in all the way. Its also possible to lift the engine from the valley bolts, but you will need to make a plate or something.

2x4 under the oil pan and lift with a jack. The motor only has to be lifted minimally to get the motor mounts out.

Wont hurt it put 2x4 etc to spread the load evenly use a floor jack and it will be fine. The oil pan is cast aluminum you would really have to put some weight on it to hurt it.
