If the head of the bolt is off its free, the bolt threads into the bed so now the stud is just going to be stuck in the bed. Putting it back on will be a little more tricky now but not impossible as its just getting that stud back in the hole and tightening the others (there are 4 on each side 8 total iirc)
Last time i had to take my bed off i was without air tools and managed to get one hung up and had to cut the head off, im sure this is a common occurrence in the north..

Once beds off you may actually be able to cut the speed nut and get the bolt out, and get a new speed nut and bolt and be good to go....

I'd use CRC Freeze Off or PB Blaster on the remaining bolts and let it sit so you don't create additional work for yourself.

I usually just pull all the bed bolts and set it on the tire and bumper with the support braces centered on each of them

Funny this just happened to me. I hate Michigan.

I did one side and the results were the following...

One bolt came out perfect. One bolt sheered. One bolt is spun. Now I gotta grind it off. I stopped and went inside after that. It's not like you can access the freaking nut so now I got to grind everything and waste hours of time.
