Well they saved my life so I'll never remove them on a DD.

BlueCajun5.3 had a nice list of weight reduction stuff and their weight in a diet thread. Try to search for that thread there was a few replies as to who's done what.

I've removed the factor seats in place of racing seats, took out the insulation under the factory carpet, removed the passenger airbag, removed the factor exhaust heat shield that ran under the bottom of the truck, removed all of the stock exhaust hangers, spare tire/bracket, rear bumper and replaced with rollpan, the air condenser(will have the entire ac off soon enough).
I think there's still some weight to be lost in the truck. Just have to get it back up here to the warehouse and check it out some more.

All I've done is remove the spare (still have the brackets) and tools. Swapped bumper for pan. I'd like to make one run this season without the passenger and rear seats if I ever get around to it.

Easy stuff to do:
Rear seat(if applicable)
Spare
Bumper(if applicable)
Tailgate
Sway bar
passenger seat
center console
door panels
speakers
cd player
interior plastics
abs
lighter rims/tires(one of the biggest differences)
everything else gets a bit silly
There's a few pieces of solid metal in the engine bay like the piece underneath the stock air box.

Also all that egr/air(if applicable) weighs a good bit so you can remove that.
If you can do the battery mod to move it to the rear of the truck, that's a good 30 pounds of better weight distribution
