Since my ls1 swap and trans I've been thinking about this too. Not to mention my Torq thrusts that are like new. I have nationwide so I'll check with them and report back.

I paid $5500 for a mint Trans Am with 79k miles and a few tasteful mods...they offered me $7600 to keep, or $9100 to let it go...I chose that latter.

I go through ANPAC. With them, you can sit down with your agent and fill out a form a declair the value of all aftermarket and custom things on your vehicle. Then, if it exceeds $5,000 which they will cover at no extra cost, the will send that form to the underwriters and adjust you policy for the extra coverage. I highly recommend them. Plus after three years with no claims, you get %25 of your premiums back every year (if you have car and home insurance). I have all my audio equipment covered with this.

Their rates are the lowest I have ever found, I was given two options 1. take this amount and we pick up the car, 2. take this amount and you keep that car.

I have AAA and have bought back from them. Unless its completely destroyed or has major structurale damage to the body I don't see why not. In my case I have repaired and driven them. But they would still be worth more in parts then the $1500 additional pay out. In a lot of cases the engine and trans alone could fetch that. Not to mention the value of the interior if you keep it in fairly decent shape.
