What is retarding my timing?

You can disconnect the knock sensors by unplugging them but, they are not what causes "burst knock"
Burst knock is really just a timing retard table based on a change in airflow as the throttle is increased. It has nothing to do with the knock sensors really.
With a blower I would leave the knock sensors hooked up and go after the timing problem in the computer program.
Problems like these can be hard to diagnose/fix without the ability to look at and change the computer file. It may take many times of sending your computer back and forth to get this thing straight. If you are up to it, it might be a good idea to invest in a scanner and tuning program and dive into trying to fix it yourself with help from here.

you dont want to disconect the knock sensors with boost. bad idea.
i know you dont have the tools to do this but on my truck if i had this problem i would go log some stuff with efilive and then look at the programing with ls1edit and find the problem. i believe hp tuners will do both for you and cost less money than efilive and edit. if your tired of sending your pcm back and forth and plan on continued mods it might be time to invest in hp tuners and learn how to tune. there is lots of help around here.

Like parish8 and xlr8nss have stated, it would be easier to diagnose and work this problem if you had a scanner and your own tuning software. I agree with the comments about timing possibly too low in the low rpm/hi load area.
Burst knock can be "disabled" by zeroing out the max burst KR table and/or increasing the delta airflow table to very large values. I have tried both and seen no difference in tuning, FWIW.

there are a few dyno's in new england i work with a guy his dad owns one up north. a few friends and myself are going in oct to use it he got it for us at $400 thats for an all day use and anything in the shop and he is supposse to have a computer system that he can use to tune every thing.
