Which stall speed do I need?

depends on what kind of drivability you want out of it. If you plan on nitrous I woulnd't go too big or else the converter will flash REALLY high when on the bottle.
On LS1 cars with your cam I would use a min. of an ST3500 with ST or SS3800 being optimum for good street manners and an awesome launch at the track. With nitrous though you may want a slightly lower STR rating.
In my T/A I had the Y3000, then the ST3800 then the PT4400. I liked the ST3800 the best. The 4400 on 125shot dry kit would flash to 5000rpm at launch which is way too high IMO. LOL

Oops, just realized you are putting this in your new 4L80E. You might have a hard time getting a high stall from Yank. Might check with Presision Industries. The high STR rating on a converter might not hurt you so much now because of the high 1st gear in that tranny

I'm not TOO concerned with driveability, although I still want good street manners. The truck isn't a daily driver, but I still want to be able to enjoy it on the street.
I was thinking about the Yank TT3200, but don't know if that will be enough or not.

Well put it this way, If I were staying N/A or with nitrous I would be upgrading to a 3500 stall because the stall I have is too small for my cam. My power doesn't really pick up hard till 4k so I have about 1000rpm of blah! I am sure I could launch MUCH harder with a bigger stall and more agressive STR. My cam is only slightly larger than yours and not enough to make a huge differance in powerband. Then again I am only making 320-330rwhp as it sits so the extra power you have might make it not so blah between 3-4k rpm

Well with the 80 you are going to be limited on choices. As for the two Yank offers (at least according to the webpage) I would chose the 3200. Are you planning on putting in some shorter gears to compensated for the high first gear of the 80? If so, you may not need quite as much converter to get you out of the hole.

Yeah, the rearend is next on the list...I was thinking 4.10's and an Eaton.
If you could choose any stall speed, what would it be? I've found a place out in Louisiana that does 80 converters in pretty much any stall speed that you want!

I'd go with a 3500 stall. Anything lower and you'll be kicking yourself for not going higher to start.
Whoever you get it from tell them you want to hold around 4800-5000rpm on the upshifts. That's what my old ST3800 held and it was freaking awesome, Just right IMHO. I had a 3200 before that and it wasn't enough to even worry about. The 3800 was probably my limit for daily driving in the traffic I drive in.
The converters I had were for a car so just let whoever builds your converter know that it's for a truck and that you want a 3500-3800 stall speed. A STR of 2.5 would probably be good. That is a good compromise converter for mostly N/A with some nitrous maybe in the future.
