The 4.8L, 5.3L, and 6.0L motors are LS1 based. The 8.1L is a big block.
The 4.8L and 5.3L have smaller bores and strokes than your 5.7L. The 6.0L shares the same crank as your 5.7 but, has a 4" bore to give it a few extra cubes.
The truck blocks are all iron but, the new Envoy will have an all aluminum 5.3L motor starting in '03. I think the trucks will also start getting aluminum blocks but, I'm not sure about when that will happen.
There are more small differences with the fuel system, MAF, etc. but, the blocks and heads are all interchangeable.

The 6.0 and 8.1's will remain iron blocks at least in the pickups simply for HD usage.
Also, the 8.1 is a mixture of Old School Mark IV Big Block design with LS1 technical cues. The only way you'll be able to get the 8.1 is if you opt for a 2500HD (which is a single axle 1 ton truck) or a 3500 (which is the dually). Both also upgrade you to the the Allison 1000 series transmission which is a Godsend for towing but is a boat anchor for performance.
You can also get a 2500 Avalanche with the 8.1 which you'll get the 4L80/85E transmission. THe Allison isn't an option here.
