You should be fine doing it with the plug. I think you'll get most of the fluid that way.

Ordering the cam from Thunder Racing....

Should I get the gaskets from them? There is not any detail to what is included, it just says "cam gaskets". I've got a connection with GM for good pricing. Should I just pick up what I need from the dealer?

What will I need?

Timing chain cover gasket, water pump gasket, and valve cover gaskets are the ones that generally come with the cam swap kits. On my new motor I reused all of them, they are designed to be reusable, and I think you'd be ok with a low mileage engine.

The only gasket I replaced was the oil pan gasket when I changed the rod bolts, only did that cause it would be a bitch to replace after putting the engine in if it leaked. Didn't want to risk it.

I had heard they were reusable, but didn't know for sure. Since the cam swap isn't time sensitive, I'll just wait to see if I need them.
