That is the cat over-temp protection. Basicly it really richens up the afr when it sees you cats getting overly warm during PE mode (wot).
All the rear o2's do is monitor the effeciency of the cats. Without them, the pcm will throw a code but will not hamper performance what so ever.
John.. if you have them cut off, do not waste your money on sims. I will just add that to the list of things I am going to have them do to your predator tune.

Is there a specific temp sensor for the cats? If not, how does the PCM determine that the cats are overheated?

When you get rid of the cats, do you get rid of ALL of the O2 sensors? Mine are rattling and driving me NUTS. Figured it's about the same $ to cut them off as replace the O2s.

You're LTrims usually go way out of wack if you don't re adjust fuel after removing your cats.
Scream, you're kidding right? LOL
Just the rear o2s can be deleted as they are no your primaries. Your front ones should be replaced and kept in good condition as your gas milage or motor will end up taking a dump if you don't.
