You will NOT be happy with the N/A 6.0 and 4L80E. I can guarantee you that it will be the same as, if not slower than, your 5.3/4L60E combo is right now. If you're using it as a building block for a future performance upgrade, then go right ahead. That 80E will soak up all of the extra power that the 6.0 has over the 5.3. 1st gear will feel like a dog. Been there, done that.
The 5.3 with a 1900 on it at 6 psi will live FOREVER. I ran my 5.3 with a Radix on it for about 80k miles, and when I pulled it apart it looked brand new inside. That was with meth and 10 psi through it as well. If I was going to start over and was in your position, it would be 100% no-brainer...1900 all the way.

I have 35x13 tires that weigh 113lbs with 4.56s on the stock 10bolt with the G80, I am waiting for my rear end to explode...
