I have read a good bit about people running the 315 on a 12" wheel. That's why I am considering running the 295 when I get my 15's. However, there are lots of guys getting it done with 315 on a 10" wheel. Yours look great installed.
If you can't get the cables off the backing plate, just disconnect them from the y-bracket coming from the pedal and pull them out.
So you are getting fluid at the end of the hard line at the wheel or at the y-block? Have you tried disconnecting the banjo and see if you are getting fluid thru the flex line?

As far as the tires go, the 295s would be a better fit on 15x10s.

Is the bleeder screw on your caliper pointing up or down?
Also, it's not uncommon for rubber brake hoses to swell internally or develop a flap inside that impedes brake fluid flow. You may need to replace your old hoses, they don't last forever, even when they look okay on the outside.

Your calipers didin't come with new copper washers for the banjo?
You will want to remove the parking brake cables anyway from the truck so I would just loosen the bracket that holds them to the single brake line coming from the parking brake pedal and remove them there.
