Its not as easy, I take mine offroad sometimes, and even with only a 2600 its harder to feel the throttle. If I went offroad often then I would want near stock stall speed.

It depends on the manufacturer and how they set up the converter, some are really tight and some are really loose. A tighter converter would be what you want, it would allow for right off idle movement allowing the tires to hold traction, where as a looser converter wouldn't start to grab until later in the rpms and while 4x4ing it might cause more wheel spin. For a tighter converter look at yank's truck thruster series, the tt2600 and tt3000 are both said to be very tight, but will still flash up to their rated stall rpm when going full throttle. For your use I would probably go with the tt2600, i imagine it would mind its manners pretty well on the trails, and from the stoplight when mashed it would still let the rpms jump up for the nice takeoff.
