Default Centering Engine!!

What is the best way to make sure new motor is centered in engine bay?I'm installing a 355 chevy in my 1992 gmc 1500 with solid mounts.I tried lining up center of intake manifold with center of engine bay but the motor isn"t plum,if I move the motor 2 inches to the driver side the motor is plum but not centered.Should I center it and just shim the motor mount on passenger side to get it plum?
