With factory control arms and spindles can I get 3 inches of drop with just the coilover conversion?

Yea, I would say so! What does your current setup measure from the center of the wheel straight up to the top of the fender well?

Looks like it's 22" from the center of the wheel to the fender lip.

You have a tahoe? The fender is a bit different than the trucks. A tahoe guy with my kit is sitting at roughly 16" right now, so there is plenty of room for what you want.

So I should be able to get the ride height I want with the Pro-Comp shock adapter and not have to mess with the stud mount?

Correct. If you take a measurement from the lower shock bolt to the upper shock hoop thing i can tell you what springs and shocks youll need.

Im afraid i cant comment at all on the tahoe rear setups, dont know much about them. You can try the tahoe forums though.
