What are you smoking! Happy Easter!
Just want to say happy Easter. If you guessed right I am smoking in the smoker today.

Things turned out pretty good. As you can see from this picture I came up with a nice barky crust.
I took these and wrapped them up in some foil and let them rest for a couple hours in a cooler covered with a towel. Then when it was time to pull them they literally feel apart. Here was what we came up with with very little fat.
