Question Salsa tips and tricks

OK as some of you know when I'm not working I like to cook. Well this spring my boss Chuck and his girl friend Amy decided to start a garden at his house. Well now it is time to start picking what has been growing in the garden. With that being said I have a load of tomatoes that he keeps giving me. These are very tasty and I wanted to make something with them for the guys at the shop. I have decided that a red sauce for lasagna will be one of them but also I wanted to make salsa. I made my first attempt yesterday and it was pretty good but I like chunky salsa. Mine was a little watery because I used a blender to combine my ingredients. After doing a little bit of research I found that using a potato masher is a better way of mixing the ingredients and to cut them by hand first. My question is how much of what are you using and do you do the ingredients fresh or do you cook/roast them first? Please share your techniques and recipe's if you would. Thank you. Vince

Fresh is the only way to go. when you cut your tomatoes press them some and drain off the water before mixing in the other items.

Thanks DOC. I did remove the seeds and rinse them. I think using a blender is where I got off track. I wanted to make a more chunky style salsa. It tasted pretty good and did thicken up a bit after sitting in the frig overnight. Anyone else make their own? Ideas?

Adding a little Cilantro and some Garlic salt along with lemon or lime juice is good too.

I used some onion, tomato, jalapeno pepper, garlic, salt, pepper, lime juice, cumin, chili powder, and ................then more tomato in bigger chunks. I was pretty good even though I wanted it more chunky. I did a few searches on Google and read that people use sugar and other fruits in their salsa. I even saw avocado.

Mmmm, sounds good, I like the above recipe and add in some Red Fresno chillies for a little added flavor.

I use a little electric chopper i picked up at walmart for about $3 it holds about a cup worth and i cuts it up fairly decent but still has decent chunks.

i usually have the same ingrediants as above but i use jalapeno out of a jar cause they are usually hotter than fresh ones. I also add a little evoo to it. this is making me hungry and i might make some tonite.

3 Tomatoes, 1 Pablano pepper, 1, anahiem pepper, 1/4 red onion, 1 jalepeno, 1 clove garlic, handful of cilantro. I use a blender. Sometimes I roast the ingredients first, sometimes just put everything in raw. Salt to taste. It's good with chipotles too. Sometimes I just put in the juice from the can, other times I put a whole chipotle in. Gotta like it hot though.
