315/35/20 will fit on a 10" wheel but it is not optimal and will be leaving some of the tire's performance on the table. If you just want the tire for looks and street driving it will be fine. If driving the truck competitively, go with an 11" wheel.
As for the exhaust concern, I'm running a 4" over the axle on a ~6" rear drop with minimal interference. Dual 2.5" will not be a problem at all if it is tucked up close to the bed.
