99 gmc sierra and 85 c-10 builds

well ive been on this site for quite some time now just been searching around and getting ideas. and well its finally time for me to start a build log.
well to start off my truck is a 99 5.3 4l60 extended cab. its got 3.73 gears and sitting on 33 inch tires.
current mods are specter air intake, true dual exhaust from cats back with spintech mufflers, and a tune by Wheatley.
well awhile back i ordered all of these parts

tr220 cam, ls7 lifters, ls6 springs, 7.4 pushrods, hd timing chain, circle d 3000 stall, and pacesetter long tubes.
i forgot my camera in my truck at our shop so i dont have any pictures of the truck this second but i will get some up tomorrow when i get back out there and start working.
but i do have one picture of my 85 that i will be building here soon also just figured i would combine both of these into one build log
(i know its not the best but i will get some more tomorrow.)
for this i was given a 6.0 the other day for free that was making noise in the lower end from what the guy said. so i will be taking it apart after i finish my 99.
but i got a couple of different question
first how i can i tell which 6.0 i have?
second what shift kit and servos should i get?

i also want to give a little background information on myself.
Well im 20 from kinda small town in Texas right in between Houston and Galveston. Im am currently living in College Station attending Texas A&M trying to get my degree in architecture. I spent my whole life so far around cars. MY dad and uncles all build classic cars which has led me to learning all i can about cars and wanting to always work on them.(if anyone would like to see any of our builds id love to share some of them).
