On your stake pockets did you space apart your welds? Meaning tack then do the opposite side and the other side, basically move around, if you weld in a straight line like you normally do you can/will warp the material.

Yes, I space them out. Couple tacs on this side couple on that side. Then let them cool and did something else, then went back, and did a couple more. Until it was complete, same with grinding. I knew about that. and it's really not warped, thats mainly the difference in paint and baremetal, and maybe a slight amount of material removed from metal finishing it.
