V8 FTW!!
With a good tune, you'll get better if not the same gas mileage. Plus IMO the LS motor just flat out runs better than the V6.
I had my V6 in the truck from 21k to 100k miles. It wasn't too bad.
I swapped in the 5.3L a few months ago, it's not near as hesitant to get up to speed, there is less strain while driving around.
Go the V8 route, just put a tune on it. That's more than enough and you wont regret it later on down the road.

So.. Im gonna follow my heart and go V8 The problem with owning a vette is that you start to measure everything you drive aginst it.. even though this is gonna be a DD the V6 just lefte me wanting more.... something..

Please don't make the same mistake all us V6 guys already made.....go V8. My RCSB is too much for the 4.3/auto. You'll get tired of driving it on the highway really quick
