Put in a 5.3 and now towing is horrible

Electric fans, so are they:
1) working
2) working when they are supposed to
High coolant and high trans tells me there is no air flow. Maybe. There should be airflow to keep it cooler if doing 55mph, but check out all possibilities.

possible wired backwards? blowing air thru the grill?
ive done that before and didnt check them until my coolant wouldnt go below 220 idling and the AC wouldnt blow cold. DOH!
i could feel air being moved but had to use a peice of paper to check and see which direction. Swapped the wires and VOLA.
Be something easy to check and rule out.
and if the fans are tryin to push air forward, theres no airflow persay.

I think the problem is that you're mixing up the gauges, and reading the trans. temp, when you should be reading engine temp.
In all seriousness, I'd like to look at the tune, myself. Also, I'm guilty of doing what Nonnie said. Check that out.

So did it start at that point when you changed all the parts or a few months later when you installed the E-fans???
