Brake Questions??

I pre-emptively bought front and rear pads the other day in prep for doing them this weekend. It looks like the stock pads still have 60-70% life left on them.
My truck has about 50k on it with the original pads. I was told by the guy at NAPA that the stockers are ceramic. I bought ceramic to do the job but think I'll be taking em back soon. The $160.00 can be used for my Eaton Posi in the next two weeks.
So are the stockers ceramic on an 02 4x4? and....
Why does my emergency brake pedal go all the way to the floor and feel soft when doing so? It never seems to get snug as you engage it.
Is there some special way to adjust the emergency brakes or are they self adjusting by going in reverse and engaging them at low speed kind of thing.
Could a fluid change help out and a bleeding?
My regular brakes seem to work fine, the pedal feels a little mushier than when it was new but never had an issue stopping.
