Well .. I'm still waiting on word for tuning ... over a month now I think and not getting anymore responses.
The crossmember won't work wihtout cutting the center out. I'm thinknig about either getting one from a bigger truck or making on very similar to it.
Right now both trannies are sitting on the floor next to each other. I will try and grab some pics tonite.
Did I mention I was waiting on tuning yet?

OK ... got some pics of my own now. Here's the root directory for this set:
http://www.woracing.com/truck/80e%20swap/
This one shows how far the mounts are off

Here's the difference in converter size:

In the main directory ... *1050 and down are of the trans sitting in the trick held up by a jack. What we did was cut the hump part off of the tranny brace. THe hump part is bolted to the trans by the trans mount and the crossmember is in place held up by it's bolts.
The last couple of pictures is kind of an idea of what I had for modifying the crossmember. Welding the hump part in the center of the brace sideways and cutting the excess off using what's left to brace it up, then take some sheet metal and cover it up and make it look nicer than it would with big gapping holes in it.

Since you've got access to a welder, pick up a length of 2.5" square tubing and make one. As long as you're got a 14" abbrassive chop saw to make nice cuts it will come out great and be stronger than stock.
What I needed is totally different than what will work on your truck, but have a look at these for some ideas. On an OBS truck the entire driveline is off-center a few inches to the passenger side. Not sure about this for NBS but check for it if you decide to build your own...

I was thinking something like that would be ideal. I looked at the heavy trucks and it looks like they have a crossmember very similar to the one you have stock. I thought abou tgetting on of those and drilling holes in the frame and making it work.

That picture shows where I would have to be drilling on the driver's side. I think it would be OK, but I would rather no disturb the fuel filter, pump, and lines if I could get away with it.
That does give me some other ideas though. I'm thinking, that maybe I can put a 45* angle towards the front to put it in the original location. That would complecate things a great deal, but if it would look that clean, I think it would be worth it.
