Sounds like it got hot enough to boil away some of the water, which led to overheating, which probably won't happen with the Dex-Cool in there. Perhaps it was cooler outside when it didn't overheat? Intermittent problems are a pain. Glad it is OK now!

The radiator is bad about stopping up ..... I have to replace mine every 60 to 80,000, but if you have a NEW radiator, the most likely suspect is a sticking thermostat.

It is cheap, so get a brand name or go to the dealer and try that.

I know it has been a month, but the first time mine acted up it took me a month to find the problem.

I find from working on them you have to buy a stant or Gm thermostat ( from dealer or ACD parts and they are not expensive ) the cheap ones tend to fail either it sticks with the bypass to the pump open and overcools or not opens to the radiator enough and the bypass is open which makes it run hot . also check between the a/c condensor and radiator for trash and you should also blow the condensor clear from the backside as they plug up too and limit the air flow if you have one .

If you didn't get all of the air out of the cooling system then you're going to get intermittent over heating. There are several writeups on refilling the system after all the changes you've made. I had the same issue when I swapped in the bigger radiator and e-fans until I took my time and filled the system up correctly. Never an issue after that.
