Alright on to the questions..I have a 2007 tahoe that is my DD and tow rig for my sleds in the winter and my Jeep in the summer...I am currently trying to add some more power without losing any low end...I need more in the 2000-3000rpm range as thats where I am cruising on the highway..currently I have magnaflow, airaid, edge, vette servo/sonnax 4th gear,4.10's. I am looking at adding the Powerbond UD pulley, and some 1.85 roller rockers...reason for the rockers is the afm motor..I do not want to get into messing with a full blown cam swap and the 1.85's will give me alittle more lift. I am also torn between leaving my stock manifolds or going to a mid-length header...I do not want to lose any torque down low. Any help/opinions/real world experience with this would be fkn awesome...Thanks.

With a cam swap and a custom tune you can turn off the AFM if need be, or you can set your AFM parameters a little higher to help it stay in AFM longer. Either way custom tunes are way better, and I can't wait till i get mine here soon.
Either way I think the 4.11 are not deep enough for your truck I would go with 4.56's. What tire size do you have? If you wanna tow with that little motor in such a big SUV you need to turn about 2500 rpm.

I am running 33's and turn right around 2300-2400rpm@75mph...the truck runs good empty and pulls hard from 3k on up...but its below 3k that I definetly want more torque.

Well have you thought about a TVS supercharger or STS Turbo?
I had a combined weight on my truck of 8500lbs "trailer and truck" and I thought it did fine with the 4.8 and horrable 3.23 gears.
But your truck probily weighs 7000lbs ready to roll and you have those heavier rims and tires to suck of more power plus what ever weight you toss on it.
So I think unless you wanna tow with your 2500 getting so sort of FI is the best bet.

Towing with the HD is not going to happen...thats just my sunny day play toy..I am trying to keep the Tahoe NA, but not sure if I can get what I want without going the FI route....would a stall help out much??

Stalls are not advisable for towing as the convertor will just stall more. A stall is not just a stall, but a combination of weight, motor size, and power.
I don't believe the rocker or UD pulley can throw codes.
