Can you go into more detail on the coolant temperature jumping around? How quickly is it moving and have you checked its accuracy with a scan tool?

Could be the water pump getting ready to go out or a blocked up radiator if it is fluctuating slowly.

Have you checked it with a scan tool? Could be the cluster going out.

No, the cluster has nothing to do with that.

Temp sensor probes rarely go bad. They're such a simple design that there really isn't much that could go wrong with them. The PCM gets signal from it in the form of voltage change or ohm resistance, so you might have some electrical noise or a bad wire somewhere causeing it to read funky.
