Default Help with engine sounds?

My 1990 Silverado is making me pretty angry. For some reason when I'm driving, if I let of the gas pedal, it will stop roaring and (insert hard to explain noise) start making sounds as if I'm quickly gassing it and letting off over and over. Almost as if something in it is firing off multiple times, only its making the sound my truck makes when I give it gas. I hope you guys no what I mean by this. Especially if I'm going at a slower speed like 20-30 mph. To get it to stop making this noise I have to give it gas again. Thing is, my gas pedal is real tough to push down, like it sticks and you have to give it a push. If you hold your pedal down to the angle that you drive 30 mph on, that's the lowest angle I can get it without it not giving any gas at all. Another thing that might not have anything to do with it but I'm not sure is my engine stalls pretty commonly if I'm trying to move about 5-10 mph. Like its not getting enough gas to the engine. But to give it more gas, I can't go slower than about 25 mph without using my brakes.

Please help. It's my project truck and I'm trying to make it sound good. I want a loud, deep roar. It has a pretty nice sound right now, but its not as deep or as loud as I want it. I put straight pipes where the cats are and pretty soon I'll be taking the mufflers off and I can't make a truck sound like a Cummins if it is making the sounds like it is. I really hope someone of here can help me fix this problem.
