Default engine temp

i was wondering, what is the optimal temp to shoot for on our engines? my temp ranges from 168* to 181* depending on the beating i give it. i got these temp readings through a snap on scanner, don't know how accurate this is though.

I've read the car guys shoot for something like 178* as the optimal temp. I'm not sure, mine runs pretty after its a little warm.
