The higher you rev the engine, or more displacement you have, the more velocity you have. There is a happy medium, but most people tend to "over exhaust" their systems Correct? I for one dont see any gain using true dual 3" on a N/A 5.3 with only bolt ons.
Hell (I need to get some true dyno numbers) I believe Im between 350-375 to the tires, and I think my single 3" is better for my application than dual 2.5

No, I seriously doubt mine is the perfect combo. Wish it was, but I have Pacesetter LTs, ORY a 3"si/so Dynomax bullet into a 3"si/so Magnaflow. The Magnaflow is center in/out also (if it matters) I have seriously thought about going dual 2.5 on mine, but just havent yet (not sure if I will) I dont know if there is a "perfect" setup for sound low end and high end power, but Im happy with what I have for my application. Maybe one day I'll get a 2.5 bual setup, and see about dyboing the differences etc.

3inch exhaust is a bit big for a non cammed engine, and non "High stalled Torque converter"
that being said..
I swapped to dual 3inch Longtubes, and muffs dumped, and picked up .7 of a sec..over my dual 2-1/2" exhaust setup.
