Dont forget the plug that goes on the pass side head where a coolant temp sensor would go I forgot to take the one off my stock headsa and leaked coolant all over the floor when I started filling the truck up.

I agree, stick with Dino oil till 3000 miles. I would do the first change at 100, then 500, then 1000. Thats just me though, cant be too carefull. I would also wait till 500 miles before I just hamer the hell out of it. As far as what weight to use, hard to say. I run mobile1 5w-40 in mine, but i'm running a little loser bearing clearances than stock. Oil weight will depend a little on what you set your clearances to.

Wow, great looking engine! Is the block powdercoated? I almost had that done, but it would have taken too long.

Where my motor was built (W, FL area), the standard way to treat motors that are new is to run with just a 30 weight oil for break in - no detergents. Then at 100 miles change to a 10W-30 oil and change again at 500 miles. Once you have the 10W30 oil in you can get on it WOT, just not from a dead stop. Once you have changed the oil at the 500 mile mark, then you can do whatever you want. Do not change to synthetics until 3000 mile mark.

Just about every builder I spoke with over the phone had the same plan.

Dark I took the plug out of the stock head and put it in my DARTs. You will find that opinions vary widely on how to break in your engine but USA racing engines in Houston, TX the head engine builder there that i spoke to said they break their engines in on the dyno by starting it up letting it come up to operating temperature run the rpms up 300rpm per second to redline and after about 4 pulls the rings are seated and they beat the hell out of them. Take it for what tis worth and Im not talking about full race engines Im talking 408 strokers and the like going into T/As and Camaros for street use.
