Why does a colder engine kill MPG?

seems that all of the thermostats for our trucks are 40-50+ dollars because they come with the housing...have seen some for newer models than mine that come w/o the housing for alot less of course...what is the reason for this?
I saw one (160 degree) on e-bay w/ the housing...says its for 99-02 trucks...current bid is $20 + shipping...it is a Murray Plus brand made by Motorad...I got the part # for it from the seller and called Motorad to find out who carries their product in Georgia and was told O'Reilly and AutoZone...checked O'Reilly website...$19.99...the only one they list for my truck is not this model however...does anyone know whether this will actually fit or not? and if it is actually a 160 degree or not?

Well guys...I just got of the phone w/ Motorad Technical Dept. and verified that the 379-160 (internal part #), O'Reilly #37960 IS the 160 degree thermostat w/ housing for my truck @ $19.99ea!
From what I've read...the others that sell for $50 are made by Motorad as well and sold as Hypertech, etc.
I think that this is a great find...I'm happy!
If you have O'Reilly or AutoZone look up your vehicle on their systems, the 185 or 187 degree stock replacement unit is shown ONLY.
I assume that is why none of us have found this already...

Yes, it should.
Mine is in and seems to work perfect. But, I need to adjust when my fans come on now. They're still set at 194.
I wish they marked a part # on the housing. there are no markings at all to differentiate it.
