All the time. But you work have to be way off to make that happen.
It seems to be a little here there type of problem.
Racing hot lapping, but then just stop and go stuff.

Are you losing any water volume? Or have ever ran the catch tank low?

Well I did one Dyno run today and it went from 180 to 240 in one run and the guy said it could be timing, but it want the guy who thned it I've never ran a catch tank and I'm pretty sure the olny time I lose water is when it's over heating and comes out the over flow. What pressure radiator cap do I need

Tear the heads off and change head gaskets And use studs before you create more issues

Every bolt in the motor is arp and gaskets olny got 1800 miles on them I'd hope they are still good I had this problem sence I put the turbo on

You can't run a 160 deg stat with boost or in a newer chevy there made to run at 195 deg. I tried the same thing and a guy on LS1 Tech site told me to put a 195 deg stat in and when I did it cleared up everything!! My gauge shows 200 before it opens but I think its just my gauge. Anyway it's not getting hot anymore.

Nope true fact!! the 160 deg stat will keep opening to soon until the water temp is the same in the motor and radiator after a while the stat will just stay open but the motor and radiator will continue to heat up. Besides what would anybody have to lose by trying it?? $10 for a stat and 10 mins to install it!! Trust me that's what it is. Also if you don't believe me call a parts place and ask them what the temp is on a stat for that model and year.
