If you trust the 4L60e build, you could keep it. It's just always going to something to think about because it is weaker than a 4L80e.
I don't see an issue with you cam choice you have now and the stall. You said you aren't looking for a 10sec truck and those parts are already installed in the engine. They will make great power with boost, no question there.
Flex fuel is an easy upgrade if you want to run E85, wiring those sensors in is really simple.
Should make an easy 150+ horsepower on some boost when the right tune it.

Down the road I am sure I will go 4L80 with 2800/3200 stall after the trans takes a dump. Would flex fuel really put more HP? I was looking about 9lbs of boost Max.

E85 could allow for more timing and power from the same amount of boost just because it's that much better at cooling and preventing knock.
At that low of boost, it's not a must do thing that's for sure. You just have the option of installing one and running E85 or whatever mix if you wanted too. Flex fuel sensors and a good tune can allow you to run any mix of fuel and it will change everything on the fly for you to get the most out of it.

Good to know,
How much boost "safely" you think my tank can run DD
