Most times an aftermarket converter (even if the same stall speed) will be a higher quality/work better than a factory one. I still tow and lug **** around so I didn't go any higher than 2800 rpm stall on my Circle D (it was what they recommended). Call or email the various TC manufacturers and get their recommendations (based on mods and what you use it for).

You should certainly replace the converter. A few reasons why
It holds tons of fluid. Ususally about half the capacity. You will never get all the crap out of it so you a making a fresh trans VERY dirty.
They do have a life and if the trans needs freshend up, the converter probably does also.
To stick with a stock stall has one good reason, saving money. To not install a slightly higher stall is a great way to waken up the truck a bit. Something in the 2800 range like said before will feel stock but if you get the itch to jump on it then you will have a big grin. A mild stall from FTI(and others) isn't much if any more then you will pay for a stock converter.
