Going on a road trip Friday and didn’t feel like spending a fortune on meat sticks at gas stations so decided to try my hand at making them. Collagen casings stuffed with 93% lean hamburger with seasonings and cure and then smoked for about 2hrs at 200* on straight mesquite. Turned out solid.
