Yup. My BIL and I have been doing these annually for probably 8-9yrs at this point. It’s a ton of work but damn is it fun.

Just some chops and veggies 😋.

I went to the grocery store to pick up some beef check roast for barbacoa. One of my little girls is having her first communion in week after Easter. We're just having family over, but that means a big crowd. 😂

I've bought like 55 lbs so far. Need to figure out where I'm going to make it. Maybe this is my opportunity to finally try to do the real barbacoa underground pit method. My Dad has seen it done like that in southern Mexico.

@shakenfake you want to come help me dig a hole in my backyard? ☺️

Well, did the typical way of cooking. Did 54 lbs of barbacoa, frijoles puercos (refried beans), rice, salsa and fresh tortillas. @shakenfake PM me please. I've you a plate Brother.

That looks delicious

Saturday I grilled for my girl's dad's friend's daughter's birthday. Who let me on the grill? Literally first time actually manning it. I am not a grill person nor a cook. Plus I've only met this guy a couple of times and never his daughter but alls well that ends well. Did some fajita and chicken. Nobody got sick so I guess I did something right!
Ended up having one too many brews and they got me on the mechanical bull. Lasted something like 25 seconds and they had it on max spin speed, was pretty fun.

This week's special: 2 racks of loin ribs and 2 racks of St. Louis spareribs. Basic seasoning and a tiny bit of oregano. 2 trays of seasoned potatoes and my wife made some salad.

For BBQ sauce my wife and I used Habanero sauce. ☺️

Kids loved it. Spares were tastier, but both were darn good.

Side note: this week my office group took a new hire to a local place called Flying Fish. I'd been there before but always got the fried platter. 🙄

I decided to have the grilled trout and seasoned fries. It was good but insanely salty! Ho-Lee Chit! I'm not big on salt and been trying to eat less salt and exercise regularly. I'm I the only one that this happens to?

Every now and then I get destroyed by some salty food but I enjoy salt.

Another 5 racks of ribs. put 5 racks on this morning at 3am and they were done at 7:30. Put another 5 racks on at 8am and took them off about noon. Then threw a couple dozen chicken drumsticks on. ​​​​​​​it sure has been smelling good out side all day. ​​​​​​​
