What am I missing? FI and Tuning

The more I study tuning, the more confused I become.
The primary element of a good tune. A good VE table. Correct? Easy enough... Get a 2 bar map sensor, update HPT to 2 Bar SD tuning, update your tune to the extra VE resolution etc. Disable the MAF, log with a wideband, tune your fuel trims to near 0. Stay negative. Lots of work but easy enough. Then... you loose it all when you go back to using the MAF?
Am I missing something? You cannot use 2bar VE tables etc and a MAF? The neat stuff with the 2bar HPT option but only in SD mode. Why not?
If I want to run a MAF, Which I think I do, don't want to have to tune the thing every time the weather/air changes. How do you tune VE with 1 bar?

Im not too sure on this either, but with my new setup im going mafless. From what I understand SD tuning is pretty straightforward, but you are correct in that it all goes to crap when you throw the Maf back in. Im going to tune the VE table somewhat fat and add meth. It may leave a little on the table as opposed to a full out SD tune, but it should still make quite a bit more power than with the Maf. Some one correct me if Im wrong, but this seems to be the conensus among the LS1tech tuning guys
