.76 will be around WOT throttle NA. The gms/cyl is a calculated number derived from the MAF flow and RPM. I know in HPTuners there is a PID especially for that. I'm pretty confident EFILive had the same PID as well.
All timing is done by RPM and gms/cyl. gms/cyl is essentially how much air is in a single cylinder. Knowing this and the rpm, you can know exactly what kind of load is on the engine.

Im seeing .87 g/cyl @WOT with 30.2 degrees at max!! I would work on your VE tables first before you do any changes to your spark tables!!!! You want to make sure your fuel corrections are as close to zero as possible!!!!! Reason being... your OBD2 sensoring does not get used by the PCM in WOT to make the proper corrections!!! Meaning your o2 sensors and MAF do not get used by the PCM once your in PE mode( Power Enrichment AKA WOT). It automatically uses the VE table for all its calculations!!! If your VE tables is sending wild fuel corrections right now, in ex: LTFT reading +3 or higher, or -4 or lower, than you could really be messing things up right now!!!! If you notice your scanner, AS SOON AS YOU GO WOT, YOUR PCM 0's OUT THE LTFT(Long Term Fuel Trims). If they are supposed to be making corrections that are higher than that 3% or lower than that -3% than when it 0's them out...you could be looking at a nice detonation from either lack of fuel, or air!! Usually lack of fuel is what you have to worry about though!!

damn anything 30-31* shoudl be MAX, you guys are running some damn high timing over that. Most LS-based engines run best on 27-29* WOT. Mine happens to be at 28-29*. And thats max as shown on the scanner, check your AFR adder, i had to back it out some b/c i was commanding 24* and getting 30*.
