Default running hotter in colder weather?/?

hey guys what would make my engine run hotter in colder weather not much hotter instead of 180 its at about 190 and its weird because it can be 100 degrees out and it wont past 180 but when its 50 degrees it will and also i had this problem last year but it seemed the colder it got the hotter it would run which it was over 210 last year until i changed waterpump.also idle isnt smooth it almost sounds like a diesel out the tailpipes .but runs good later on in the day.

thanks mike

How are you checking the temperature? You realize the factory gauges are a joke right?
