Anybody else notice how our nnbs trucks seem faster when you ease onto the pedal instead of just smashing it to the floor, or is it just me? Does it have something to do with the throttle body not opening 100% like it would if it was cable driven? Just curious.....

It has to do with the cells referenced in the timing tables. Rapid WOT, airflow increases rapidly while still at a low RPM where many values in the timing values are negative. Burst knock retard comes into play too. Easing into the throttle keeps it in the lower airflow areas of the table with higher timing. Data log it and then look at the timing histogram. You'll see what I'm talking about. Throttle limiting is part of it, but light throttle limits the throttle too. Tuning can improve both.
