Can the 2bar MAP from autometer work for tuning?

you "probably" would do something useful with it, but in the end it may very well do you more good to just replace the stocker & run a 2 bar custom operating system to do what you want.

How would you tune a 1bar OS w/ a 2bar map? In other words what parameters would you be trying to adjust. A 2bar OS would have map tables that read 2bar. 1bar OS tables read 1bar map.
That is becoming a cluster F of vacuum lines though. What about FPR, PCV, and brake booster? I'll be right up there w/ you though if I ever finish my current mods and put in the meth.
